Veggie Rub

Zucchini Planks on the grill

  • 2 Large Zucchini- cut into planks 1/4 - 1/2 inch thick
  • 3-4 Tablespoons of Olive Oil
  • 2 teaspoons of Mickey & T's Veggie Rub
  • Grated Romano or Parmesan Cheese


Slice zucchini into planks and brush with olive oil, then season to taste with Veggie Rub.

Grill till almost done  (tender) on both sides, and you have "grill marks".  Then top planks with grated Romano or Parmesan cheese and  let cheese melt with grill covered; or if in-doors broil until golden brown. Slice on the bias and serve with a side of Marinara or tomato sauce.


                    MIXED GRILL

  • NO Stick Aluminum Foil or Grill Rack
  • Mixed Vegetables of your preference-cut up
  • 1/4 Cup-1/2 Cup Olive Oil depending on amount of Veggies
  • 2-3 Teaspoons of Mickey & T's Veggie Rub
  • 4 Tablespoons of Lemon Juice (bottled is OK)
  • Fresh Black Pepper to taste- Table side/after cooking 

Season any combination of vegetables (cut into 2-3 inch pieces) with Mickey & T's Veggie Rub, olive oil & lemon juice and toss. Wrap mixed veggies in foil and grill over medium hot coals until tender. Fresh cracked pepper to taste, if desired.  Yum!



Also Mickey & T's Veggie Rub is great for steamed or sautéed vegetables. When vegetable is almost cooked to desired tenderness, squeeze 1/2 fresh lemon juice over vegetables and add Mickey & T's Veggie Rub and serve. Place a metal steam rack in large sauce pan  with 1/4 inch of water, Arrange veggies on rack. Cover with lid cover on HIGH heat until water comes to a boil. After 1 minute, turn OFF burner/ or take off burner. Let sit, covered for 10 minutes, while the rest of the meal finishes. Steamed, but not overcooked.


For a vegetable dip, combine 1/2 cup each of sour cream and ranch dressing. Add a squirt of lemon juice and a heaping tablespoon of Veggie Rub. Add shredded carrots, diced cucumbers (no seeds) or any other vegetables you have available. Refrigerate mixture overnight and let the vegetable flavors infuse themselves together. Use as a dip or on top of washed whole Romaine Lettuce leaves.


T's "Never Fails" Perfectly Steamed Salmon

  • Microwave safe Pyrex Dish (that fits in your Microwave)
  • Large Salmon Filet (~12 inches- I like the Salmon at Costco)
  • 5-7 Tablespoons of Lemon Juice (I use bottled)
  • 2 teaspoons of Mickey & T's Veggie Rub  (Veggie has lots of Dill)
  • 1 Boil in Bag Brown Rice prepared as directed

Wash fish and pat dry with a paper towel.  Cut into 3 inch strips (serving size), and line up in the dish close together- skin side down.  Pour Lemon Juice all over fish pieces, and allow excess to just go to the bottom of the dish.

Sprinkle Mickey & T's Veggie Rub  on to all fish pieces. Let set at room temperature for 5 minutes, while you start preparing a steamed vegetable (maybe Broccoli ) and the Boil in Bag Brown Rice.

Now place the Fish in to the Microwave (this is the ONLY dish I make in the Microwave, but it always turns out great). COOK on HIGH for 10 minutes or until fish is no longer "red/translucent".

(Caution: Dish may be hot, use mittens).

Salmon comes out perfectly steamed, about the same time your veggies and rice are finished. WOW a great FRESH, Heart Healthy dinner in 10 Minutes! My husband always says "Great dinner Honey" after this meal.  EASY even for non-cooks and beginners, and QUICK. Serves 2-4
